Both times my son has been to America I have tasted an infinite amount … and not just for breakfast. Wholemeal, salty, with maple syrup, caramel, ice cream, fruit, melted chocolate, spices, vegetables, bechamel: I could really make a long list and go on from here all eternity because with their imagination it is never enough. Very easy to prepare, ready in a matter of minutes, and able to fall in love with anyone: here’s how to prepare American pancakes!

After numerous searches on American sites and several tests of softness (fundamental characteristic) they arrived and integrated into my recipe, which you find below. In the United States pancakes are eaten everywhere but are a mainstay of breakfasts and brunches. Now that even in Italy these late breakfasts that replace lunch are very fashionable, I recommend you try it and, of course, to drown them in maple syrup or, if you really have to take a break from tradition, in a chocolate ganache.

flour 00 150 g
medium eggs 2 (at room temperature)
butter 30 g + 10 g for the pan
milk 200 g
chemical yeast powder 6 g
caster sugar 20 g
salt 1 pinch

maple syrup to taste

Melt the butter and then let it cool. Divide the albums by the yolks and put them in a bowl; add the yolks to the milk.

Combine the melted butter and the sales pitch, then beat well to create a homogeneous mixture. Sift the flour, baking powder, and amalgam thoroughly into the mixture. In another bowl, mount the albums together with the sugar with an electric whisk and then combine the two compounds until you get a frothy batter.

Maple syrup pancakes

Heat a non-stick pan, put a very small piece of butter in the center and then pour over it a ladle of the mixture, which forms a circle of 8-10 cm in diameter. When you see bubbles forming on the surface, turn the pancakes with a spatula to brown it on the other side too, then put it on a plate. Repeat this operation until you finish the dough. Serve them by sprinkling them with maple syrup to taste.


In addition to the classic maple syrup, you can also serve with jams or jams, fresh chopped fruit (banana, berries, cherries …), cream or, if you like, tasty peanut butter.


Lightness: the dough must be treated with gloves; mix it yes, but without mixing it too long to prevent it from disassembling
Freshness: I highly recommend preparing pancakes at the moment, because even keeping them to perfection will never be as good as lukewarm and just served
Good the first one: don’t worry if the first one will come this way! It is probable that the surface of the plate is not perfectly at temperature and that you have to adjust the quantity from a distance to cook to make the following
Pancakes were born to be enjoyed one on top of the other in a beautiful pile and literally flooded with a waterfall of maple syrup. Maple syrup is similar to honey but less cloying and slightly more liquid. Just think of how many times we have seen them in American films!

You can keep pancakes in the refrigerator for up to 1 day tightly closed in an airtight container. When serving pancakes, heat them in the microwave.


Did you know that Pancake Day exists in the United States and England? That’s right! During the Carnival on the occasion of Shrove Tuesday, Pancakes races are depopulated, real competitions in which competitors must run with a pan in hand by blowing a pancake! This particular tradition seems to derive from the fifteenth century, when a woman, hearing the bells ringing for confession, rushed running equipped with an apron and a still-hot pan to the church: during the journey, she finished cooking in a hurry the pancake she was preparing.
